Corn Ice Cream

I thought making ice cream might be overkill,  however the weather here is going into the 80 so ice cream here I come.   A friend of mine mentioned how much she's likes corn ice cream.  But she hasn't been able to find it recently.  Hmmmm corn. Not a flavor I would have tried.  I was intrigued.


I was sure I could make something that would live up to her memories of corn ice cream. Armed with Vegan a la Mode I was ready to make a batch.


This recipe called for 3 ears of corn which were lightly caramelized with some sugar.  Once all of the ingredients were combined the mixture needs to chill for about 3 hours.  I'm glad I read this in advanced otherwise I would have been sadly waiting for the ice cream.


I thought this ice cream was pretty good.  A little sweeter than the others I've made but I could taste the corn and couldn't wait to share it with my friend.  While she enjoyed it she felt the corn flavor was lacking a little.  I think next time I might add a bit more corn and less sugar.

I've been noticing with some of the ice creams I've made that they get a little icy after a day in the freezer.  I'm wondering if anyone has experienced this as well?  I hear that mimic creme is a good substitute and doesn't seem to have this issue.

  1. never heard of corn ice cream before but would love to taste it!

    I have only made ice cream a few times and mine has gone a bit icy - esp after sitting for a while. Apparently agar helps to stop it being too icy.

  2. I had raw maple corn ice cream once and remember it being super good! This looks pretty yummy too. I think you get the creamiest ice cream by using canned coconut milk. Adding 1 tbsp of vodka helps the ice cream not form ice crystals. I've heard that xanthan gum works as well. I'm sure MimicCreme would work just as or almost as well as coconut milk too. :)

  3. Fascinating! I've seen veggies in cakes, but never ice cream. And then the comments tell me I need vodka and agar to make good ice cream - every day's a school day over here!
