Vegan MoFo: Nori Roll

I had high hopes today of a wonderful post for Vegan MoFo.  Life got in the way.  A friend invited me to a screening of Tron boy was I excited however, this meant I wouldn't be able to do any cooking.  Here are some pictures of a Nori Roll I made the other night with some left over shitake mushrooms.

The other night I came home starving and remembered I had these wonderful mushrooms marinating.  Had hunger not been an issue I would have made some brown rice to go on these as well.  I put avacado, sprouts and the mushrooms on them.

Vegan MoFo: Mushroom Bourguignon

I was in the mood for something delicious and comforting.  In a class at Spork Foods one of the recipes we were taught was Mushroom Bourguignon. Who would have thunk.  It was hearty, flavorful, and delicious.  Perfect for the windy cold night we were having.

This recipe came together really easily.  Most of the time is spent chopping and waiting for it to cook... while trying not to drool  :).  I loved it and will be making this again soon.  Do you have a favorite stew or soup?
