Vegan MoFo: Beauty of Simplicity

Last night I went to the market to pick up some ingredients and came across this gorgeous yellow cauliflower.  I love finding items in the market that are a little different. When I got home I thought roasted cauliflower sounded great.  I tossed a little olive oil and some salt on it put it on a cookie sheet and put it into the oven at 375 for about 50 minutes.

The smell was wonderful and it tastes even better.  MMMMM part of lunch or maybe a little snack if I can't hold off.

This was so great can't wait to make more.  What are your favorite roasted veggies?

  1. I've never had roasted cauliflower before - it looks like I'm missing out and I'm gonna try this for sure. I think my favourite veggie to roast would have to be garlic - I can seriously eat a whole bulb. I don't get any kisses afterwards though.

  2. Roasted broccoli is just as great as roasted cauliflower. :) Roasted Brussels sprouts are awesome, too.

    P.S. I don't eat avocado, so you'll always know that guacamole will not be gracing my blog posts! ;)

  3. I freakin' love roasted cauliflower! Sometimes I add some garam masala for a kick of extra yumminess. Roasted broccoli also tops my list, although that tends to leave my apartment smelling kind of funky...

  6. yum, I love roasted cauliflower--sometimes I like to use sesame oil instead of olive oil, and maybe add a dash of soy sauce
