Vegan MoFo: The Comfort of Soup

The other day it was rainy and cold here.  Fall had finally arrived so in that spirt I decided to make some soup.  I wanted to try out a recipe from one of my cookbooks so off I went in search of a great recipe.  I'm not sure what came over me but 3 soups later I was done.  The soups turned out wonderful and I sent some with a friend to work and have been getting emails ever since about how great the soups are.  YIPPEE!  It's always feels great when you make something and people enjoy it.

Broccoli Potato Soup with Fresh Herbs from Veganomicon.  This had fresh mint and dill in it.  I wouldn't have thought of this herb combination but it was fantastic.  This soup has quickly become a go to recipe.

Cravin' Corn Chowder from Native Foods Cookbook.  This soup is pureed with some additional corn put in for garnish.



I had this Corn Chowder for lunch the other day and it was wonderful.  Very filling, rich and flavorful.





Potato Leek Soup from the Urban Vegan cookbook.  The recipe has you puree this soup.  I did leave some chunks of potato in there.  Next time I would puree it all as I enjoyed the pureed soup so much.





Everyone seems to have enjoyed the soups but had favorites ones.  I would say they were all a big hit and I have enjoyed eating all of them.  I would be happy making any of them again.  My first big day of soup cooking was a big success.  I can't wait to try more.

  1. I love these kinds of soups and this time of year for them is ideal. However, I'm in CO and it's still in the 70s! Crazy! Thanks for sharing. :)
