Vegan MoFo: Sweet Potatoes

Well I'm sorry to say but today has been another crazed day. Sadly my post today reflect it.  I went to a cooking demo at Native Foods for the first time.  It was wonderful.  I left with some new recipes and tasted many of the items that were made.  I had high hopes of cooking today however the nail in my tire had other ideas.  Needless to say my trip to the market was put off until tomorrow.   Ahhhh the joys of car ownership.

I baked some sweet potatoes earlier this week.  I forgot how tastey they are on their own.  And the color gives you that fall feeling.

  1. I LURVE sweet potatoes! I really do enjoy them roasted in bite-sized chunks and dunked in ketchup, but mashed, baked, it's all good!

  2. I love them baked and unadulterated...so yummy! I also like them chunked and roasted with cubed potatoes, crumbled tempeh, and chopped onion topped with vegan chedder. Very good stuff :)
