Blueberry Lemon Muffins

As many of my friends can tell you I've been a bit obsessed with blueberries and citrus recently.  When I came across a blueberry Lemon muffin recipe for The Joy of Vegan Baking I knew this recipe was meant for me.

I ran to the kitchen and started checking to make sure I had all of the goodies needed to make these muffins.  Good fortune ruled the day and no emergency market trip was needed.  These were ease to put together and filled 12 regular size muffin tins.

They have just come out of the oven and it's all I can do not to eat one.

I just had one and they are AMAZING!  I will be making these again.

    I love how blueberries sort of explode when they're cooked into muffins. These look delicious, you're making me hungry for muffins!

    Ooohh what a great combination, normal blueberry muffins were always a bit too dull for me, but adding lemon is genius
