Vegan MoFo: Pumpkin Oatmeal Cookies

I love this time of year.  So many holidays coming up and time to enjoy with friends and family.  We are getting closer to Halloween and Dia de Los Muertos.  During October I'm reminded of all of the fun videos out there.  Who can forget Thriller or doesn't want to join in a Time Warp Dance.   All of the TV fun this time of year, Pumpkin Atrocities or The Great Pumpkin.  Lots of fun ahead of us.

I love making items with pumpkin as you can see in my other posts Chocolate Pumpkin Brownies or Pancakes or Muffins.   I was in search of another great pumpkin recipe when I came across Pumpkin Oatmeal Cookies.   Oh this was perfect.  Cookies are great to share at work no knives needed.

  These cookies were perfect.  The flavor was great.  I didn't put the raisins in as I'm not always a fan of cooked raisins.  They were light, moist and soft.  YUMMY!






As I walked down the hallway at work to put them out I offered them to people I saw.  By the time I reached the end of the hallway the cookies were gone.  I'd call that a success.  The next day a co-worker came into my office to ask if I had any more.  YIPPEE vegan cookie LOVE! Rave reviews from ALL.   I think you should give this recipe a try.
