Vegan MoFo: Thin Mints

I heard about Chef Chloe after her panini won at a local restaurant and was excited to learn more about her.  I've been reading her blog and getting emails for about a year but had not made one items yet. I've decided to change that!

I must admit that when I go to the markets and they are selling girl scout cookies I'm a little sad because I loved Thin Mints and Samoa cookies and knew those were now part of my past food memories.  Leave it to Chloe to come up with a Vegan Thin Mint recipe.  As a chocolate lover this was a must on my list.

Yummy cookie goodness





The cookies were nice and crunchy and had that hint of peppermint you look for in your thin mint.  Covering each cookie in chocolate was a little labor intensive but well worth it.  These were gobbled quickly eaten up by my co-workers who couldn't stop raving about them.



I can't wait to make these again.  What a yummy treat.

  3. Yum! Thin mints and samoas were my favorite Girl Scout cookies as well. Have you tried the samoa recipe out of Vegan Cookies Invade Your Cookie Jar?

  5. Look Great!!!!! ALL these SUPER COOL things are all over the place once I quit sugar and gluten. But it's probably better that way since I have about ZERO discipline!

  6. I've had this pinned on Pinterest for a while and have been wanting to try them, but was never brave enough to try it. Now I can't wait... hopefully next weekend I'll have time to do it. Love Thin Mints!
