Creamy Pumpkin Sage Penne

I can't believe how fast this month has gone by.  I've been missing out on lots of delicious pumpkin recipes.  This  Creamy Pumpkin Sage Penne from Chef Chloe has been on my must make list for awhile now.

The sauce was really easy to make and so decadent.  I used soy milk for the sauce and a little less salt then called for in the recipe.

The addition of pecans added a fantastic crunch to the penne and the crispy sage was a wonderful touch, worth the time. This pasta was a hit.  I had lots of left over sauce.  It's almost DRINKABLE.  I'm not sure if I just like pasta with less sauce or if this recipe makes a large portion.

I think mushrooms would be a good addition in this dish.  Maybe I'll try that with the next batch I make.

What's your favorite savory pumpkin recipe?

  1. I made something really similar for dinner tonight, the Butternut Alfredo from The PPK. It was so good, such a perfect Autumn meal.

  2. That looks delicious - I love pumpkin in sauces. I love it with sage too - I've been planning to make some pumpkin and sage ravioli for a while!

  3. Yum! I like how pumpkin can easily transition from something sweet to something savory.
