Fabulous Fun Friday

Today was one of those great days.  No work and a day of frivolous enjoyment.  Catching up with friends, reading vegan mofo blogs and cooking.

I've been looking at all types of vegan peanut butter cups and was inspired by Chocolate Covered Katie.  I thought making a white chocolate peanut butter cup would be a fun change.

 Luckily a few months ago I purchased some vegan white chocolate chips.  Time to break them out.  I decided to put dark chocolate peanut butter in the center.  I added about a 1/2 tsp of vanilla to the peanut butter.

Top me off
1) Melted about 1/2 a cup of white chocolate and  coat the inside of  cupcake cups. 
2) Put the coated cups in the refrigerator for about 1/2 an hour so they harden.  
3) Mix the vanilla with the peanut butter until smooth.  
4) Divided the peanut butter between the harden chocolate cups.  
5) Melted a little more white chocolate to top the cups off.
6) Put in the refrigerator until hardened (about 1-2 hours)


I made the layers a little thick it just means there is more to enjoy!  Next time I'm going to make my own white chocolate.  These were pretty easy to put together.  SO GOOD!

  1. They look amazing! I wish we could get vegan white chocolate chips here. The nearest we can get are tiny packets of white chocolate buttons.

    1. I'm thinking you need a care package. White chocolate in the winter :). Maybe we could do a little international swap? Hmmm. think about it.

    What brand of white chocolate chips did you use? I was looking for some a while ago, but I was hesitant to buy anything (they were all expensive) since I didn't know if they would be any good.

    1. LIeber's. I got them from Vegan Essentials. They were a bit pricey but I decided to splurge on a bag. For quick use they we great to have but I will be trying some white chocolate recipes.
