Potato Kale Soup with Sizzling Chorizo

Oh it's getting windy here.  Perfect time for some soup.  I've been enjoying trying out less used cookbooks and this Potato Kale Soup with Sizzling Chorizo  from Viva Vegan sounded wonderful.  It looked pretty simple to put together.  A mixture of kale, potatoes, onions and garlic topped with chorizo (or something else in my case).


I cheated a little with this recipe. I used Chipotle Field Roast Sausages instead of making Seitan Chorizo Sausages and I used regular olive oil instead of the annatto-infused oil.  How did this turn out you ask?  Delicious!  The spiciness of the sausage really kicked this soup up a notch.


I'll be eating this all week.  Sorry I don't have a picture of the final "assembled" soup.


If you haven't tried this recipe I strongly recommend it.  It was filling and hit the spot.  A perfect dish.

  1. That looks really good! I love greens in my soup, but I've never tried sausage in soup.
