I love cake. What's not to love.... sweet, moist, fluffy little slices of paradise. Since becoming vegan I haven't made many cakes. I'm not sure why but I always pass over those recipes.
A few weeks ago I purchased bananas with the best of intentions and didn't consume them all fast enough. When I came across my extremely ripe bananas I wanted to make something a little different so I decided on cake.

I've been having a lot of success with recipes from
Chloes Vegan Desserts so I took a peek inside there first. I found a recipe for a banana blueberry cake. PERFECT! I just happened to have some blueberries in my refrigerator.

The flavors in this cake were perfect. The blueberries and bananas went so well together with the lemon buttercream pushing it over the edge. Fantastic.

The responses to the cake were "That cake was AMAZING!" and "This is one of the best desserts you have ever made." and that came from on of my "Testers".
I was pretty happy with how it turned out. Let me know if make it and enjoy it as much as I did.
That's a lovely looking cake! I don't bake cakes often but I always seem to make ones that have fruit involved.

DeleteNow that you mention it, I realize that I don't make all that many cakes either. Our go to for ripe bananas is banana nut bread/muffins (or freezing them for smoothies or soft serve), but I think that this cake would be a nice change of pace! It sounds and looks very tempting.
