Leek & Bean Cassoulet with Biscuits

Veganomicon was the first vegan cookbook I purchased after becoming vegan.  Everything I've made from it I've liked but sadly, I haven't made much from it.  Last week I was reading JoJo's post over at vegan.in.brighton and knew I would be making the cassoulet.



The weather has been getting cooler the past few days and today seemed like the perfect time to make it.  This does take some time in the kitchen but it's well worth it.  Biscuits, carrots, leeks, potatoes, and beans.... perfect comfort / fall meal.  I found the recipe on the web but if you don't already own the cookbook I highly suggest getting it.



It is hearty and filling.  I loved it and now see why JoJo use to make it every fortnight.  I have plenty of left overs so I will be one happy camper for DAYS!


What is your go to Veganomicon recipe?  How often do you make it?

  1. I have Veganomican but ~I've never made this but I'm tempted now. It's starting to go colder here so this would be perfect comfort food. Probably the thing I've made the most from that book is the cheezy sauce.

  2. This is one of my favorites from that book. But I like any kind of stew type dish and any kind of biscuit really, so put them together and I'm in heaven!

  3. Veganomicon is a great cookbook!

    This looks tasty! We tried it once, but after sitting down at the table I realized that I forgot to add in the bouillon cubes. Essentially I "flavored" it with water, which, needless to say, made it pretty bland. We could tell it had great potential though. Thanks for the reminder about the dish, we'll have to give it another shot once the weather cools -- and next time we'll be sure to include all components.
