Tofu Scramble

I know,  I know you saw the title of this post and thought "I know how to make a tofu scramble" or "Been there, done that".  Boy do I have news for you.... a fantastic addition to your scramble that will push it over the top.

The ingredient is the Peppadew.  If you've never heard of them before they are a type of sweet piquante peppers.  Sublime!  I love them.  I serve them whole, stuffed, chopped, mixed basically any way I can.  I feel a bit like Sam I am!


My tofu scrambles vary every time I make them.  Some of the ingredients I've used for scrambles are spinach, kale, chard, mushrooms, peppers, squash, garlic, peppadews, nooch, tumeric, potatoes, shallots, field roast sausages ( I love adding some field roast Chipotle sausage for  heat), and of course asparagus. 


Right before the scramble is finished cooking I chop up a few peppadews, toss them in the pan mix it around and serve.


Woozah the scramble is good.  I have been eating these as if they are going out of style.  What are your favorite ingredients for scrambles?  If you try the peppadew let me know.... I can't imagine it will disappoint you.  It hasn't failed me yet.

  1. I always forget potatoes, but I really shouldn't because that would totally kick my scrambles up a notch. Also, I love some vegan sausage in my scrambles too.

    1. I just started using vegan sausages and really like them in the scramble. I agree about the potatoes. I'm always a little sad when I don't have one.

  2. whenever I see a scramble recipe my reaction is completely the opposite - I always have to have a look to see if I can add to my repertoire! I love the idea of sausage and mushies in there - so tasty!

  3. Wow, that looks like an epic scramble. I'm a big fan of onions and mushrooms in mine but I should definitely try more variations.

  4. Ohhhhh yes, I love peppadews. If you're ever looking for an h'orderves idea, I suggest getting some whole ones and stuffing them with (non-dairy) cream cheese, yum yum yum.

    Anyway, at the moment I've been favoring tofu scrambles made with mango juice and sweet curry powder. That might sound weird, but it is SO GOOD! With a bunch of veggies of course (usually onions, carrots and spinach) plus something savory to balance out the sweetness (soy sauce works wonders).
