Vegan Mofo: Pumpkin Pancakes

Phew I am getting this posted just in time.  My tire saga continued today and after many hours at the tire place I returned with not 1 but 2 new tires.  Sadly my day of cooking once again went right out the window.  Luckily this morning I made some pancakes and took a few photos to share.

I tried a recipe from Vegan Brunch.  Pumpkin pancakes seemed great for the windy and rainy morning.  I was in a bit of a hurry and didn't get a picture of the cooked pancake. Sorry about that.  I had hoped to make another batch and get some but my tire saga prevented that from happening.

I would have liked a little more cinnamon in my pancakes perhaps even a bit more nutmeg.  I also found it a little difficult to tell when these were ready to flip.  Maybe my next batch of pancakes will be with berries.  Do you have a favorite?  Hope you had a relaxing weekend.

Vegan MoFo: Cooking & Dad

When I was younger, my sister and I would often cook in the kitchen with my mom.  For my sister this came easily.  She is a natural and often throws things together and has an amazing outcome.  I'm a good cook but use a recipe.  I rarely deviate from tried and true.

My father has never been a big cook.  This summer when I was talking with him about being vegan he was so interested he decided to give it a shot.  I was a little worried as I know he doesn't cook much but at the same time very excited for him.  I have been getting some funny emails from him and mentioned if he ever wanted to write something for the blog let me know and I would post it.  Not 20 minutes later an email arrived so today I have the pleasure of a guest blogger, my dad, Bob.  He wanted to share his cooking experiences with everyone.

From my dad:

I usually stumble falter and fall in the kitchen. I am not totally inept or incompetent,  but I certainly can make a case for it.

 
Though not totally true, I blame it on upbringing.
 
I had an aunt with whom I lived, who would throw me out of her kitchen.  My  mother did all of the cooking while the guys (me included) worked the farm.So in my formative years, (until a ripe old age) I barely learned to boil water. If I couldn't nuke it I didn't eat it.

If I boiled water, I usually boiled it over. Thank goodness for that as it put out the fire from the paper towels that had burst into flames.

Even my dogs wouldn't eat my cooking.

And then, my daughter, bless her heart,  introduced me to veganism this past summer.  It is simple easy and delicious. We have eaten in restaurants,cooked at home, ordered food from caterers, bought vegan at stores, and all has been delightful. 

Vegan saved my life.

Now when it comes to the kitchen,  I no longer worry about  boiling water. I do most my cooking in a blender.


Keep up the great work dad!  I couldn't be prouder.  I'm so glad it's going well for you.

Vegan MoFo: Pumpkin Muffins

It's the perfect time of year for pumpkin bread and muffins.  I have been craving pumpkin baked good for months now and was excited when I found some canned pumpkin in the store.

I found a recipe from Vegan with a Vengeance  for the Best Pumpkin Muffins.  I've made this recipe before and it was a delicious.  As I had a friend coming into town to stay with me I thought I would make a batch.  They have a great combination of flavors and the spices just pop.

Sift the dry ingredients together.

These muffins are a huge hit.  Everyone who got one enjoyed them.  Next time I think I'll need to double the recipe.
