I have joined the email lists of different sites that send recipes to me and thought this one looked good. Who doesn't like a good Chili.
This was fairly easy to put together and boy does it pay off the chili was yummy.

This recipe makes a nice amount. I sent a container of it off to a friend for lunch at work, froze some for a later date, and I had it for lunch a few times last week and it just kept getting better. It does have a bit of heat to it and I believe the longer you have it the hotter the spices get. If you don't like spicy food I would suggest cutting down the chili powder.
The friend I sent a batch to said "I had the chili last night it was good. It was a little hot but if the food is good I work through the heat". This chili was good!

I'm a big fan of Chef Alex (I constantly recommend her book, The Great American Detox Diet), but I usually eliminate the oil from her recipes. Chili is one of my go-to meals to whip up when I need lunches for the week and don't have a lot of time to cook.
ReplyDeleteThanks for comment on my post. Sadly I went to make steel cut oats and those pesky weevils had gotten into it! I was so so angry.... How do they get into sealed container and a glass one at that... I love chili and I love mine with corn. Adds just that bite of sweet to calm the heat. :o)
