I have only made vegan mac & cheese once and it was cooked in the oven. I was in the mood for mac & cheese but didn't have time to bake it, so I went in search for a stove top recipe. I found this
recipe over at Fat Free Vegan Kitchen. I had my recipe so now I was off to make it.
I made a few changes to the recipe ie: not using fat free soy milk and an extra dash of this or that.

I enjoyed this mac & cheese. Think it is best when served right off the stove but isn't that always the case. Do you have a favorite mac & cheese recipe? Care to share?
I've never missed mac & cheese, so I never really seek out vegan versions. I do think Susan's recipes are awesome, though, and I'm sure I'd have turned to her, too, if I'd had a mac & cheese hankering!
