Vegan MoFo: Mac & Cheese

I have only made vegan mac & cheese once and it was cooked in the oven.  I was in the mood for  mac & cheese but didn't have time to bake it, so I went in search for a stove top recipe.  I found this recipe over at Fat Free Vegan Kitchen.  I had my recipe so now I was off to make it.

I made a few changes to the recipe ie: not using fat free soy milk and an extra dash of this or that.

Cheesey sauce

ready to add to noodles

So steamy you can barely see the mac & cheese cooking away

mmmm almost ready

Ready to eat

mmm the cayenne pepper is a nice touch

I enjoyed this mac & cheese.  Think it is best when served right off the stove but isn't that always the case.  Do you have a favorite mac & cheese recipe?  Care to share?

  1. I've never missed mac & cheese, so I never really seek out vegan versions. I do think Susan's recipes are awesome, though, and I'm sure I'd have turned to her, too, if I'd had a mac & cheese hankering!

  2. That looks really, really good! I like cashew cheese pasta: http://epicureanvegan.com/2010/05/23/creamy-macaroni-and-cashew-cheese/

And Vegan Yum Yum has a good "alfredo" one: http://epicureanvegan.com/2010/01/21/hurry-up-alfredo/

Veganomicon has a cheezy sauce for pasta, nachos, etc. http://epicureanvegan.com/2010/04/06/cheezy-sauce/
I'm definitely going to try this one you made because I'm always up to trying a vegan mac and cheese. Thanks for sharing!

  3. That looks so cheezy! I don't have a favorite, I'm still experimenting so I'll have to try Susan's recipe. I love her BBQ Riblets!
