As a teenager I was lucky enough to do an exchange with a family in France for one summer.  I went to stay with the family for about 5 weeks and then one of their daughters, about the same age as me, came to stay with us.  My mom thought it would be a great way to experience the country.  It was a magical summer filled with wonderful memories.  One of the girls we spent time with really liked Bananrama.  Now everytime I hear 
this song it makes me think of the time I spent there.
In memory of that wonderful summer and 
Bananarama I decided to make some (drum roll please) banana bread.  A long time favorite and I hadn't made it since becoming vegan.  I turned to 
The Joy of Vegan Baking and found a recipe for Chocolate Chip Banana muffins.  I've never added chocolate to my banana bread now we are talking!

I'd made a lot of muffins recently so I decided to make this into a cake, instead of using the usual loaf pan I thought a bundt cake would be a nice twist.  I think it was the right choice, look how pretty it is.  For a little more "flare" I added some banana slices to the top.
Another great recipe with a 
chocolate bonus.  They went bananas for it at work.  If I had been able to make this in France and share it with my friends from that summer it would have been perfect.

ReplyDeleteThat looks so good, it's crazy! I always go the hippe route with my banana bread - whole wheat flour and such - but I have to admit that the idea of adding chocolate chips sounds pretty excellent. :)
