Vegan MoFo: Fudgy Oatmeal Heaven

As many of you know my love for chocolate knows no bounds.  I enjoy making treats for co-workers and when one of them requested Fudgy Oatmeal Cookies from Vegan Cookies Invade Your Cookie Jar I was thrilled and set off to make them.

(side note: I gave a link to the recipe as I didn't have permission to reprint the recipe on my site)

What you have to look forward to

The dry mix
This recipe has oatmeal in it so it has to be really healthy right?

Ready to go on cookie sheet

You can add walnuts or dried fruit if you wish, optional in the recipe, but for my first batch I decided to be a purist and not taint dilute the flavor of the chocolate.
oven ready
I thought they were fantastic and couldn't wait to share them with my co-worker.  HUGE hit in the office.  I put them out and when a came back a little later they were all gone.
Chocolate goodness
I mean look at that cookie who could blame them.  I think the next time I make these I will make 2 batches and try dried cherries in one batch.

I can't wait to make more cookies for VCIYCJ.

Right out of the oven
Do you have a favorite cookie or recipe to share?

  3. Those cookies are SO GOOD. Last time I used a tiny bit too much coarse salt and subbed 1/2 the chocolate chips with butterscotch chips. Evilly delicious.
