I wasn't sure to write about today but was inspired by The Jolly Fox's post on Spork Foods. Thanks for the inspiration. How I love them Heather and Jenny.
Awhile back I took a Spork Foods cooking class where we made Jumbalya. I hadn't tried to make it since becoming vegan but boy was it good! In fact it was so great I rushed home and made it for my book club later that day. It was a big hit.
The great thing about this is leftovers. MMMMM so tasty. I hope everyone is having a wonderful weekend.
