Vegan MoFo: Lemon Lemon everywhere

One of my earliest memories as a little girl is sitting under our tangerine tree eating them to my hearts content.  And so began my love with citrus.  A few years later we moved to another house and boy was I happy to find we had a lemon tree!   The fruits weren't to tart and you could eat them like an orange.  They were rarely tart.  My sister and I would eat these lemons like there was no tomorrow.  They were so delicious.  The skins were really thick and the lemon was a little sweeter than any I've had since.  How I wish I could get my hands on some of those lemons.

This month citrus season starts in California.  Every time I see the abundance of citrus it puts a smile on my face.  I can't wait to make lots of citrus treats this year.

I've made quite a few tasty treats from The Joy of Vegan Baking.  I saw one for a Lemon Bundt Cake and knew I had my next recipe.

Not only was there plenty of lemon in the cake recipe but there was also a lemon sauce that just put this cake over the top.  It had rind and lemon juice in it.  YUM!

This cake was airy and lemony (surprise).   I didn't have a feeling of eating something really heavy after finishing the piece.  Perfect balance!  It was a nice change from the muffins and cookies I'd been bringing into work.

Judging by the empty plate I found I'd say it was a hit with my co-workers.  Phew another success with vegan treats at work.

  1. What a pretty cake! I liked reading about your childhood memories. We have several fruit trees, and I'm hoping they'll cultivate fond memories for my children, too.

  4. i've never lived anywhere where citrus has a season. it's hard for me to even imagine picking a lemon straight from a tree, but it sounds divine.

  5. I love lemon anything, so excuse me while I drool over this cake for a bit. Picking citrus right from the tree sounds amazing. I'd like to get the chance to do that someday.

  7. Yum, that sure looks tasty. My favorite way to eat lemons are in the form of a tart or maybe in a lemon coconut loaf. Lemon + coconut = perfection.
