Oh how I miss Ally Mcbeal!  Recently I was thinking about the episode where Dr. Tracey Clark tells Ally she needs a 
theme song.  Hmmm maybe we all could use a theme song.  Something that makes us happier when we hear it no matter how we are feeling. 
Do I have one?  I gave this some serious thought.  There are many songs that make me happy when I hear them but are they theme worthy?  Doubt it!  I'm not sure that I have a theme song but 
this one would be pretty close for me.  Maybe it's the fun of the movie it or the memories it brings back but I always find myself smiling when I hear it.  I'm not sure but I bet it puts a smile on your face.

While trying to figure out if I had theme song I decided to make a panini for dinner.  I was inspired by the delicious 
panini's made by The Jolly Fox.  I've had a panini press for awhile now and haven't used it much.  OMG this was INSANE.  Daiya cheddar with homemade fig jam.  Boy was it good.  I must admit there was a little 
singing and dancing while making this.  Maybe Halloween is starting to creep into my thoughts.

That panini looks great, I love cheese and tomato ones.
ReplyDeleteLooks good; I've never made a panini before, but my favorite that I've gotten from a restaurant had avocados, tomatoes, spinach, carrots, and a spicy mustard spread. I need to re-create it sometime! :)

ReplyDeleteAll hail panini...best kind of sandwich ever! I'm always a fan of a pesto, hummus and daiya combo with roasted veggies but I am always a fan of The Jolly Fox's sweet/savory combos :)
