Vegan MoFo: Tofu Scramble

I was so excited.  Coming home from celebrating my moms birthday I was ready to blog about the tofu scramble I made earlier for breakfast.  It was not to be.  The evil internet was down.  Oh how I tried to get online.  I even thought I could post a blurb from my phone to no avail.

Today I am going to try and do two posts as that will keep me on "mofo" track.

 I really enjoy a good tofu scramble.  In my opinion the tofu should be crumbled not cubed.  How do you feel about the crumble vs cubed "debate"?

 I crumbled my tofu, added a little soy chorizo for some heat, cheesly, onions, garlic, spinach, and lots of great spices.  Sorry I didn't keep track of the spices.  I wish there had been some mushrooms in my fridge cause they would have been a great addition.

I was pretty happy with this scramble in fact I ate 2 bowls of it.  The great thing is I have some leftovers.  Can't wait for my next attempt.  Hope everyone is have a fantastic Sunday.


  1. I love tofu scramble, I'm another crumbling person & i also like to chuck in any spinach, mushrooms or tomatoes that I have in the house.
