Coconut Quinoa

Oh how I have missed all of you.  Work and life have been a bit consuming recently and I haven't posted for awhile.  My goal is to post more during the summer.  Last weekend my friend and I had a tequila tasting party and I can't wait to write about that evening.  In the meantime let's talk about my new found love for quinoa.

I had never heard of,  let alone eaten quinoa before I became vegan.  Now I can't get enough of it.  If you haven't tried it before I highly recommend it.  It has a bit of a nutty flavor and is easy to "throw" together as an addition to any meal.  I'm always on the hunt for ways to add it into my meals.

Needless to say when I came across this recipe from Bryant Terry's The Inspired Vegan for coconut quinoa I was interested.   I added a bit more shredded coconut than it called for but it was worth it.

The coconut is a great addition to the dish.  I was surprised at how much I like it since I usually don't like dried coconut.  This recipe is a keeper.  I've already made it a few time and have shared it with friends.
