Biscoff Ice Cream

I think I'm in love with my ice cream maker.  I've been having so much fun making ice creams that I don't know why I didn't get one sooner.  It's fantastic!

 I decided to try making a Biscoff ice cream.  I thought this might add some nice creamy richness to an ice cream.

 It was a HUGE hit at work.  Of the people who have tried my other flavors they said this was the best.    I couldn't be happier with how it turned out.  The freezer at work doesn't work that well and this remained a soft serve type of ice cream but I'm sure it would harden up in a good freezer.

Here is the mixture:

1/2 cup Biscoff spread
2/3 cup of sugar
1 can of full fat coconut milk
3/4 cup Mimic Creme ( I'm sure you could use non dairy milk instead but it might change creaminess a bit)
1 1/4 tsp vanilla
1/4 tsp salt 

Mix all of the ingredients in a blender or mixing bowl until smooth.  I used a blender.  You can taste it  and add a little more Biscoff if you'd like the flavor to come through more strongly.  Once the mixture is smooth refrigerate for 1-2 hours before putting it into the ice cream maker.  Churn according to manufacturer's instructions.  Put in freezer container and let set for at least 3 hours.  

You can always serve it softer which would require less freeze time.
