Tricky Tuesday: Cowboy Cookies

I think the trick here might be on me.  I've never been the biggest fan of dried coconut.  I think it's because I'd always had the overly sweetened / processed type when I was young.

I've been thinking about the upcoming holiday parties and decided to test some cookie recipes and find the favorites.  I'm thinking of having a holiday cookie exchange and want to have the perfect cookie .... ok at least one I love.

As I've been reading through blogs during vegan mofo I've been inspired by everyone's creativity.  I decided to crack open my copy of Vegan Cookies Invade Your Cookie Jar and look for inspiration.

I'd read great things about the Cowboy Cookies and decided to check out the recipe.  Ugh it had coconut flakes.  Do I dare?  I found some unsweetened dried coconut that I liked.  SHOCK!  I'm telling you this was no small task.  Who knows these could be the perfect cookie.


This recipe came together really quickly and took about 15 minutes in the oven.  I really enjoyed these cookies and they have dried COCONUT!  Thank goodness I was sitting or I may have fallen over in shock.  They had a bit of crunch when I first bit into them and then were chewy  and filled with greatness.  The batch was still cooling down when I left for work but I've brought some "samples" to work and so far they are a hit.  Oh just gave a cookie away and I was asked "Are these Vegan?"


Wowzah!
