Twisted Thursday

I've been vegan for a little over 3 years now.  One thing that's always in the back of my mind is eating well balanced meals.  When I get stressed or busy at work I tend to go for comfort food.  Not always the healthiest option or choice.

Here's my twist for today.  I have joined The 30 Day Vegan Challenge.  It's $20 for the month and I thought it would give me some new ideas, tips and suggestions.  While I already know a lot of this I think it's inspiring me to eat better and cook more at home.

You get daily messages, recipes, videos, audio podcasts and resources.  I haven't explored all of it but am enjoying everything so far.  While speaking with a friend, she shared that for health reasons she's going vegan and decided embark on the challenge to help with the transition.  WOW!  I felt like I had helped someone out with a quick conversation.

One of the recipes given is Garlic & Greens Soup.  I love it so much I've made it twice even though it's really hot here.  The first time I forgot to add in the seasoned rice vinegar.  Although it was good the addition takes this soup to a whole new level.

I didn't get any good pictures but here is one of it cooking up in the pot.

What's been difficult for you since going vegan?  How do you make sure you get a well balanced diet?

Let me know what you think of this soup if you make it.  I LOVE it.  I mean really doesn't making it 2 times in 3 days tell you that.

  1. I think the only thing that I found difficult to stat with when I went vegan (three years ago too!) is the lack of convenience food. It's quite hard when you've had a long day and you're feeling too lazy to cook to pick somehting up at the local store. Mind you, that does mean I tend to make more food myself now, and it tends to be healthier as a result.

    Soup looks lovely - what else goes into apart from garlic and greens?

    1. Onions and potatoes. I think adding some grains into the soup would be good too. It's really easy to throw together.

  2. I love her Garlic and Green's soup. It's also really good with some white beans thrown in.

    One thing I like to do to make sure I'm eating a well balanced diet (which means getting enough veggies for me) is throwing spinach and/or kale into my morning smoothies.

    1. White beans sound like a great idea. I was thinking some grains would be nice in the soup as well.

  3. Yeah, like Joey I'm in the UK and it's pretty rubbish for convenience food and difficult to find stuff like vegan sandwiches anywhere. I also struggle sometimes with variety just making food for one when I end up ending the same meal 3 nights in a row!

    1. I have that same problem. I'm always worried if a recipe is for a large amount of people that I will be eating the same thing for days .... sometimes feels like weeks. Recently I've been sharing my food with a neighbor / good friend who LOVES it. What a deal and she will be eating vegan those days.

  4. Yum, that soup sound good and nourishing. I'm bookmarking it to try once the weather gets colder.
    I think the most important thing I can do to ensure a balanced diet is to eat a wide variety of mostly unprocessed foods and not get stuck in a rut.

    1. Rut might be my middle name. I tend to find something I like and eat it for awhile. I'm going to try harder to mix it up.
