Vegan MoFo: Bayou Coleslaw

YUMMY YUMMY in my tummy.  This recipe is from a Spork Foods Bayou cooking class I took.
So easy to "throw" together and delicious.

I loved the Cajun twist on this and the addition of currants put it over the top.  Wish I had some right now it's close to lunch.  Sorry this post is so short work has "blown up"  gone crazy and I didn't want to miss my small window to post.

  2. @ Mandee I have the cookbook and have gone to classes as well as joined the Spork Online site for classes once a month.

    I've really enjoyed everything I've made from them.
