Easy as Pumpkin Pie

Wondering what this post is about.... let me tell you ICE CREAM!  When my sister and I were little we use to visit a friend of my father's and make ice cream with her.  We would crank the handle for what seemed like hours sharing the duties.  We love it even though it was a lot of work,  the reward was well worth it.  Who wouldn't love ice cream on a hot summer day.

I decided to get an electric ice cream maker and make some vegan ice cream.  My first attempt at this.  Armed with my copy of Vegan A La Mode I was ready to go.  The easy as pumpkin pie recipe sounded perfect.

No cooking required... which was great since the oven and stove were already being used.  I whipped together the ingredients, including a few tablespoons of rum.  Chilled the mixture for about 15 minutes and then put it in the ice cream maker.  When it was complete I transferred it to a freezer container and put it in there for another few hours.

I was picking up my friend from the airport - taste tester - and brought a little sample with me for her to try.... yes I live that close to the airport that it didn't have time to melt much.  Her words were "This is AWESOME".  I've sent some home with her for her boyfriend to try this evening.

I am really enjoying it.  Think it will be heading into work so I don't eat it all.

  1. My current favorite flavor of store bought ice cream is cookies n cream from So Delicious, but I always loved anything with cake batter.

  2. That does look insanely good. I keep vacillating between which to buy - a slow cooker or an ice cream maker. You're helping me make up my mind!
